FLAVOURS
The Mugello holds exceptional flavours, where the housewives'
skills and the many local products have contributed to an extraordinary
traditional cuisine. No "rich" ingredients, which are
often abused, but only simple recipes prepared with poor products,
available in the past.

| Do
not miss the excellent tortelli with potato, if possible served with
wild boar sauce or mushrooms. Try the delicious soups, the "farinate"
(porridge) and the "pappe"(thick soups), the wild meat and
the berries, among which the chestnuts are so marvellous that they
have gained the mark Dop. The meat has an important role in the cuisine
of the Mugello, which proposes two-finger high steaks, sausages and
roasts, and the special cooked duck. The main cheese is the pecorino,
among the vegetables the beans in oil and fried vegetables. The desserts
are home-made, such as pan di ramerino (sweet bread with rosemary),
the schiacciata con l'uva (sweet with grapes), jam tarts. Do not miss
the pudding with chestnut from Marradi. |
