TYPICAL PRODUCTS
The typical product of the Garfagnana is spelt, so tasty
and genuine that it has obtained the mark Indicazione Geografica
Protetta (Indication of Geographic Protection). A delicacy for gourmets,
the Garfagnana spelt was cultivated already seven thousands years
b.C., but was then abandoned.

Today,
thanks to the consumers' awareness, the demand for spelt is increasing
and the highest quality of spelt is cultivated in the Garfagnana,
where it had always been cultivated by sole households. Spelt, resistant
to cold and very nourishing, has always guaranteed the necessary sustenance
for the local inhabitants. Today it can be bought whole, cut or milled
in the shops. The typical gastronomy of the Garfagnana offers excellent
soups with spelt and local vegetables, apart from the tasty cheeses
made by the shepherds and chestnut-meal "polenta", prepared
with chestnut flour and pork.
